Sometimes I wish pumpkin was in season all year round. You can do so many different things with it! Soups, pies, cookies, breads. Now that I'm hungry let me tell you about these delicious cookies. They're a twist on the usual snickerdoodle as they have a pumpkin spice kiss in the center. Yum!
Add in the flour and spices.
The dough will be a little dry and crumby, but should look like this. Place the dough in the fridge for 30 minutes.
Unwrap a bunch of these babies for the cookies, and probably a few extra to try!
Form the dough into 1 inch balls. Then roll in cinnamon and sugar mixture.
Place on a sprayed cookie sheet. Bake at 375 degrees F for 10-12 minutes.
Remove from the oven and off the cookie sheet to cool. Let them sit for a couple minutes, then place the kiss in the middle and press down a bit. Note to leave the cookies alone after placing the kiss in them, until they are completely cooled or the kiss will kind of melt all over.
I choose to add a little cinnamon to the top for extra fall flavor. These cookies were so delicious and the perfect holiday treat that everyone is sure to enjoy. See you back here tomorrow cookie monsters!
Snickerdoodle Pumpkin Kiss Cookies
Adapted from How Sweet It Is
1/2 cup butter, softened
1 cup sugar
1 egg
1 teaspoon vanilla
1 3/4 cup flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1 1/2 teaspoon cinnamon
2 tablespoons milk
Pumpkin Spice Hersey Kisses, unwrapped
Dipping
1/4 cup sugar
1 tablespoon cinnamon
Cream the butter and sugar together in a large bowl.
Add the egg and continue to beat until incorporated.
Mix until just combined.
Place the dough in the fridge for 30 minutes.
Form the dough into 1 inch balls.
Roll in cinnamon and sugar mixture.
Place on a sprayed cookie sheet.
Bake at 375 degrees F for 10-12 minutes.
