Grilled Citrus Salmon

I'm always looking for new ways to cook salmon.  I really enjoy eating it and cooking it differently to bring out the different tastes.  Since we now have a spot for our grill in Phoenix I've been trying to put it to use and thought this would be perfect on the grill! 
I cut up one orange into slices, and one lemon into slices.  Also had fresh mint and basil.
Coat the salmon with olive oil, salt and pepper to taste.  Layer onto the grill - oranges/lemons, then herbs, then salmon.  You won't need to turn the salmon over, cook until the fish is opaque in the center, around 20-25 minutes.  (Pictures on the grill are a little dark, sorry!) 
Serve over the citrus slices for additional flavor.  I also made spaghetti squash to go along with it, you can find that recipe by clicking here.  This salmon was really awesome, and very simple to make.  You can really taste the orange and lemon on the fish.  Hope you enjoy this as much as I did! 

Grilled Citrus Salmon
Serves 2

1 orange, sliced
1 lemon, sliced
2 salmon filets
fresh herbs, such as basil, mint, or cilantro

Clean and lightly oil the grill.
Season salmon with olive oil, salt and pepper.
Arrange slices of citrus on the grill.
Top with fresh herbs, then layer on the salmon.
Cook for around 20-25 minutes until fish is opaque.
Serve and eat up!
