Grilled Chicken with Peach BBQ Sauce

I haven't bought Gwyneth Paltrow's cook book, but I was able to get a taste of what it's all about in a recent Bon Appetit magazine, and I was impressed.  She's obviously beautiful, and although I'm not completely convinced that she eats everything she makes, the couple things I've tried myself have turned out very tasty.  So, I'm taking it for it is, some additional recipes to add to my "must cook" list!  The first meal I tried was her grilled chicken with a homemade peach BBQ sauce, it was a great grilled summer meal.
You'll need one cup of chopped, peeled fresh peaches.  Or you can use 9-10oz of frozen sliced peaches, thawed and chopped.  I used fresh, and if you have that option, that's what I recommend.  Fresh always tastes better!
Combine ketchup, fresh lemon juice, minced garlic cloves, and adobo sauce in a medium bowl. 
 Add the peaches and place in a small sauce pan, and bring to a boil.  Then reduce heat to low, simmer until peaches are soft, around 10 minutes.  Remove from heat and let cool for a few minutes.  Pour mixture into a blender and puree until smooth.  
Season with additional salt and pepper if you think necessary. 
Place half of the sauce in a medium bowl; add the chicken and turn once to coat.  Let marinate for around 20 minutes. Cover and refrigerate the remaining sauce.
Prepare a grill to medium heat, brush the rack with oil and grill chicken until browned.  Or, as in my case, if you live in an apartment in Texas and don't want to walk outside to the grill, because you'll die of a heat stroke, place in a baking dish and bake in the oven at 350 degrees for around 15 minutes.  
Slice the chicken and serve with the remaining sauce.  I served on top of brown rice, and with green beans.  It was a simple, yet great meal.  I really enjoyed the peach BBQ sauce and have decided homemade fruit BBQ sauce is one my new favorite things.  It adds additional depth and flavor to whatever you're eating it with.

Grilled Chicken with Peach BBQ Sauce
Serves 4 *I cut in half
Adapted from Gwyneth Paltrow in Bon Appetit Magazine
1 cup chopped peeled fresh peaches 
1/2 cup ketchup
2 tablespoon fresh lemon juice
2 garlic cloves
1 1/2 teaspoon adobo sauce 
salt and freshly ground pepper to taste
2 skinless boneless chicken breasts
vegetable oil

Combine the ketchup, lemon juice, garlic, adobo sauce in a medium sized bowl and combine.
Add the peaches and place in a small sauce pan and bring to a boil.
Reduce heat to a low, and simmer until peaches are very tender, around 10 minutes.
Remove from the heat and let cool for a few minutes. 
Pour the mixture into a blender and puree until smooth.
Season mixture with salt and pepper to taste. 
Place half the sauce in a medium bowl, and add the chicken. 
Marinate for around 20 minutes.
Cover and chill the remaining sauce.
Prepare a grill to medium high heat and grill chicken until browned and almost cooked through.
*Or bake in the oven at 350 degrees for around 15 minutes, flipping once.
Serve with the remaining sauce and enjoy!

  1. Oh man, that sounds good! I *love* peach salsa, but unfortunately, the mister does not; looks like I'll be making this next time he's out of town!
