Watermelon Granita

Who doesn't like ice cream and sorbet in the heat of the summer?!  Especially here in Texas, this is the best thing to be making in the kitchen, because it requires no heat, and the end result cools you down.  Granita is Sicily's take on a sorbet with mainly pureed fruit, and it is delicious.
Cube 4 cups of watermelon.  You can use seedless, I didn't, but thought it worked just as well.
Add the watermelon and 1/2 cup of sugar together in a blender.
Add one tablespoon of fresh lime juice to the blender and puree until smooth.
Pour into a 9x9 inch metal baking pan.  Freeze mixture for one hour.  Make sure you set your timer for the hour so you remember to stir it!
After an hour stir the mixture, mashing any frozen parts with the back of a fork.  Cover and freeze mixture until firm, for another 2 hours at least.  Using a fork scrape granita to form icy flakes, and serve.
This is very refreshing dessert, and is pretty good for you since it's mainly fruit.  Perfect for a summer treat, hope you all enjoy!

Watermelon Granita
Serves 6

4 cups cubed seedless watermelon
1/2 cup sugar
1 tablespoon fresh lime juice

Puree all ingredients in a blender until smooth.
Pour into a 9x9 inch metal baking pan.
Freeze for one hour.
Stir, and mash any frozen parts with the back of a fork.
Cover and freeze mixture until firm, around another 2 hours.
Using a fork, scrape the granita vigorously to form icy flakes and serve.
