You're So Bananas

Originally this was a banana bread recipe, I made muffins instead this time since I now have my trusty muffin pan.  Technically, I guess these are a breakfast food, but let me be honest and say I added some chocolate chips and could eat them for breakfast, lunch, dinner, and dessert.  They have fruit therefore it's healthy.  Shhh.. just let me convince myself of this, thanks.
Begin by mashing up 2 very ripe bananas.  This is a great time to use the ones in your freezer (that you didn't have time to eat before they went bad.)  Take them out of the freezer 5 minutes before you want to start mashing them, it'll make the peels come off way easier. 
This is a very simple recipe, and doesn't require a lot of different bowls and mixers, which is awesome!  Start by melting butter, then mixing butter and sugar together.  Then add all of the wet ingredients: egg, milk, and bananas. 
End by mixing in the dry ingredients:  flour, baking soda, and salt.
This is completely optional, but for some additional fun I usually add a handful (or two) of chocolate chips. 
It will make approximately six muffins, but you can also make this a bread.  Either way it's great!  Make sure you spray the pan with non-stick, especially if you're making bread.  It will be easier to cut out of the pan if you make sure you sprayed the bread pan well.  For muffins bake at 300 degrees F for 33-35 minutes; for the bread bake at 300 degrees F for an hour and 15 minutes.
These look so much better than the yogurt I have for breakfast!!!  Baking these will make your house smell very welcoming.  These are great to bring into work, or to some one's house if you're visiting.  It's my go-to recipe if I need something quick in the house that's homemade, and that people will love.  Everyone that tries them wants the recipe!  You can taste the banana, but it's not overwhelming.  If someone says they don't like banana make sure you give them a little bite, I bet they'll change their minds.

Banana Bread or Muffins
1/2 cup butter, melted
1 cup sugar
1 egg
2 ripe bananas, mashed
2 tablespoons milk
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
handful of chocolate chips

Preheat oven to 300 degrees F. 
Spray whatever pan you are using with non-stick spray.
Start by mixing the sugar and butter together.
Continue with the rest of the ingredients, ending with the dry ingredients and chocolate chips.
For muffins bake for around 33-35 minutes. 
For bread bake for an hour and 15 minutes.

  1. So I made these tonight (I had a craving at 8:00) and they were fabulous. I used 3 bananas and split the flour between white and whole wheat. Kyle even loved them. Thanks!
